Fatalii Hot Pepper (Yellow) $5.00

I'm no novice when it comes to peppers. Jalapeno, habanero, thai, serrano, and even bhut jolokia -- I've enjoyed them all in chili, salsa, soups, and other dishes. I even tried The Source hot sauce straight up. I had never heard of fatalii peppers before, so when Tom visited my office in Rocky Hill recently and told me this pepper was similar to a habanero, I took him up on it. Tonight, I prepared some wild king salmon with a fatalii maple lemon reduction. I reconstituted a whole dried pepper in hot water, then zipped it in my food processor with a little bit of lemon juice and a little bit of the water in which the pepper had steeped. I added this mixture to about 2/3 of a cup of maple syrup and reduced the whole thing to about a 1/2 cup. The heat was intense and bordered on overpowering. Fortunately, the sweetness of the maple tempered the pepper just enough to make it tolerable, but my mouth was searing nonetheless.

This is not a pepper to be taken lightly, but for all of us who love Scoville units, it is to be taken. Next time, I think I'll add this to a big pot of chili where the long cooking time and large volume will better fit the intense heat of this pepper. I can't wait to try it again!
